Does anyone know what equipment Alex uses to change the camera so that he can alternate between the microscope, the camera that he uses for filming and where applicable... the thermal camera?

Yeah it is a Roland V-1 HD Switcher Family of HD Switching kits. Used for OBS cut ins etc.
